# 32 (4)Spinach Salad with Roasted Garlic, Dijon Mustard Vinagrette

Dressing Ingredients:                                   


  1. 12 lg. mushrooms, sliced

  2. 1 Cup croutons

  3. 1 Cup balsamic vinegar

  4. 1 Tbsp. lemon juice

  5. 2 Tsp. Dijon mustard

  6. 6 cloves roosted garlic, Pured

  7. Salt, black pepper
  8. 1/2 cup Chopped
    shallots,
  9. Salt and pepper.
  10. 1 qt. olive oil

 

2 lbs.
fresh spinach, Washed,
1 red bell pepper, julienne

Set  in bowl  the ingredients  from #1 to #9, mix well, poor the olive oil slowly as you stare,  poor over spinach and bell pepper, toss

      Also indicate for: Baby Green salad,
Romaine, Butter Leaves end moor
      Variation: (Leave
mushroom and bell pepper out use as marinade for lamb roast or BBQ  good also to marinate roasted vegetable )
