# 97 Cotoletta di maiale alla Milanese
Ingredienti :
Per 4
1. 4 Cotolette
2. Due uova, sbattute in un piatto fondo.
3. 50 gr. Di burro, chiarificato, ( segue, modo semplice di rimuvere l’acqua dal burro)
4. Un paio di cucchiai, piu o meno, di olio di olivo
5. Un po di farina con sale e pepe.
6. Una tazza e mezza di Pane grattugiato, condito, se volete, (segue la ricetta)
7. Due cucchiai di grana del Padano
8. Un pizzico di noce moscata nel pan grattato (facoltativa)
9. Sale pepe quanto basta.
10. Limone tagliato a spicchi
Direzioni:
1. Con un coltello, eliminate grasso e nervi dalle cotolette se necessario.
2. Infarinatele,
3. Adagiatele nelle uova, lasciate che la farina si bagni tutta.
4. Mettetele nel pan grattato e giratele, pressate giu con il palmo della mano in modo che assorba il pane piu possibile.
5. In una padella, fate riscaldare il burro chiarificato con l’olio di olive, a fiamma alta, adagiate le cotolette impanate, e fate indorare bene voltandole una sola volta se possiblile un paio di minuti per lato,
6. Quando saranno cotte adagiatele su un tovagliolo di carta per assorbere l’olio,
Servite con lo spicchio di limone,

Per rimuovere l’acqua dal burro e molto piu facile se fate scuagliare il burro a fuoco lento, poi levate dal fornello e mettelo a rafreddare, quando e freddo potete metterlo nel frigorifero per solidificarlo di nuovo, rimuvete, con un coltello riscaldato forate la superfice del burro in opposite lati poi girate come per svuotare un bicchiere d’acqua, eliminando tutto il liquido che e tutto nel fondo del contenitore,
Per condire il pan grattato, lascio le quantita a voi, ma qui sono gli ingredienti, sale, pepe, prezzemolo tritato fino, Parmiggiano grattugiato, aglio in polvere o granulato, a volte uso un po di fasina se lo uso per pezzi di pollo al forno.

Ingredients:
For 4
1. 4 cutlets
2. Two eggs, beaten in a bowl.
3. 50g. Of butter, clarified (cont., easy way to remove the water from the butter)
4. A couple of tablespoons, more or less, of olive oil
5. A bit of flour with salt and pepper.
6. A cup and a half of bread crumbs, seasoned, if you want, (recipe follows)
7. Two tablespoons of Parmesan padano
8. Pinch of nutmeg in bread crumbs (optional)
9. Salt and pepper to taste.
10. Lemon cut into wedges
Directions:
1. With a knife, remove fat and nerves from cutlets if necessary.
2. Dredge in flour,
3. Place them in eggs; let the flour get wet all over.
4. Put them in bread crumbs and flip them, pressed down with the palm of your hand so that the bread absorbs much as possible.
